Tasty vegan stir fry

Stir Fry.

Love a good stir fry but have gone vegan, fear not, this tasty Chinese treat is entirely plant based.

Ingredients
 1 Large onion.
 3 Garlic cloves.
 Soy sauce.
 1 tsp Chopped ginger.
 Sprinkle of cayenne pepper.
 240 g Frozen edamame beans.
 160 g Stir fry vegetable mix.
 100 g Kale.
 160 g Marinated tofu.
METHOD
1

Pour already boiling water into a pan, put on a low heat and add the edamame beans Simmer for 5 minutes (do not allow to boil).

Add olive oil to a frying pan and place on a medium heat.

Chop the onion and add it to the pan.

Chop your garlic and ginger and add to the pan after 2 minutes.

Add a shake of cayenne pepper to taste and stir well.

Add soy sauce to taste and mix.

Add the stir fry mix to the pan and stir well.

Chop the kale and add to the pan. Mix well.

Drain the edamame beans into a colander and set aside.

When the kale starts to wilt and darken, add the tofu and mix well.

Add the edamame beans and stir in well. Serve and enjoy.
