Vegan eggnog

Egg Nog.

Eggnog is a traditional but long overlooked Christmas treat. Here we've brought it right up to date, with a dairy-free and egg-free recipe that is suitable for vegans.

INGREDIENTS
 284 ml Soy milk.
 1 tbsp Vegan instant vanilla pudding powder (Doctor Oatker, etc.)
 284 ml Non-dairy whipping or heavy cream
 1 tsp Pure vanilla extract.
 ¼ tsp Salt.
 ¼ tsp Ground nutmeg
 ¼ tsp Ground cinnamon
METHOD
1

Whisk together half of the soy milk and instant pudding until thickened. Add the remaining soy milk and the cream and mix well.

Add the remaining ingredients except cinnamon.

Allow to chill overnight before serving, and sprinkle with cinnamon just before serving.
