Sweet potato hash

Hash.

Sweet potatoes are rich in antioxidants, fibre, potassium, and vitamins A and C, making this a healthy, quick, and easy, lunch.

INGREDIENTS
 1 Large sweet potato.
 1 Half red onion.
 1 Clove of garlic.
 2 Peppers.
 1 tbsp Rosemary.
 1 tbsp Avocado oil.
METHOD
1

Chop sweet potato into 1inch cubes.

Heat avocado oil in skillet (or frying pan) on medium high heat.

Add sweet potatoes and let cook for 10 minutes while covered.

While it is cooking, chop onions, garlic, and peppers. Add to pan for 5 minutes. Serve while it's fresh and hot.

OPTIONAL

For an extra kick, add chopped jalapeno in step 4.
